Lovely Complex - the only REAL romantic comedy in anime, well at least from what I know about, plus - Umibozu!!!
Baccano! - mystical thriller, I just can't describe this thing it just is so great.
Shigurui: Death Frenzy - samurai, swords, blood and ... who doesn't like that?
The Jungle was Always Nice, Then Came Guu - Guu-sama!
Hajime no Ippo - sport and comedy, Takamura rules!
Honey and Clover - a powerful drama, girls are drawn strangely though

Did anyone say Neon Genesis Evangelion yet? This is, in my opinion, the best anime- bar none. Evangelion is extremely thought provoking and changed my entire perspective on the concept of self and how others can define us.

If I could only recommend one anime series it would be NG Evangelion. If you haven't seen it go watch it, if you have then watch it again. Rebuild of Evanglion is rewriting the book on excellence.
